Pisco Bar: Chilcano

It is summer time in Peru, and hot days call for refreshing drinks at the bar. One of the most asked for drinks in summer is Chilcano, a refreshing cocktail that has come back strongly, and now it is constantly evolving in a way no other drink had before. The history of Chilcano is still a mystery; different theories try to explain its origin. What we know according to Peruvian literature is that the first Chilcanos were enjoyed in the early 1900s.

Chilcano is distinguished every year in January with a whole week of celebrations on its honor. This year, Chilcano’s Week, will be celebrated from January 9th to January 18th.

If you are lucky to have a bottle of the Peruvian brandy, pisco, you may want to try making a Chilcano at home; the following is the original recipe:

INGREDIENTS:

Ice cubes
2 oz. of Pisco
2 drops of Angostura Bitter
¼ oz. of lime juice
2 slices of lime
Ginger Ale

METHOD: Mix pisco, 1 slice of lime, and lime juice, in a long glass. And then, add ice and top with ginger ale.
GARNISHMENT: 2 drops of Angostura Aromatic Bitter, and 1 slice of lime on the edge of the glass.
